Spring Green and Blue Cheese Pasta Salad

Serves 4

* 4 ounces of penne

* 5 cups of spring greens

* 3oz blue cheese, crumbled into small chunks

* 1 cup cherry tomatoes, cut in half

* ½ cup of milk mayonnaise

* 3 tablespoons Balsamic vinegar

* Salt and freshly ground black pepper

* 1/3c crumbled walnuts

Cook pasta in slightly salted water. Drain and rinse with cold water. Let dry. Place cold pasta in a large bowl. Mix in all other ingredients. Serve immediately.

This is a light, healthy pasta salad. Perfect in summer, for a little more color, add some yellow cherry tomatoes, and cut up colored peppers into small pieces. This salad can also be made with olive oil instead of mayonnainse, but it is not as good.

Tomato Fusili Pasta Salad

Simple and very aesthetically pleasing, this pasta salad makes a great side dish. simple-pasta-salad

Serves 4.

* 4 oz fusili
* 2 cups whole cherry tomatoes
* 1 celery stalk, chopped
* 2 large dill pickles, sliced
* 1 cup fresh corn kernels, cooked
* 1/2 cup chives, chopped

Cook, drain and cool fusili. Add to large bowl, and mix in all other ingredients. For a dressing, you can try either olive oil and some red wine vinegar, or add a homemade mayonnaise. This is a plain, but very healthy and hearty salad!
